Every week I am going to be doing the challenges set on the Great British Bake-Off and my first challenge was a swiss roll. I did not choose a swiss roll that was cooked on the show I made my own using my two favourite ingredients, white chocolate and raspberries.

Little dishes of different taste explosions and textures! So great for a summer party and I love that everyone can get involved in the preparing and cooking of this together. That's a lovely experience to share with your friends and family over a long lazy afternoon or summer's evening. I have put together a few simple versions here using abundance available now, so play, explore and experiment with different versions and yes I will be posting more tapas treats during the coming months to create a truly delicious tapas experience.... A beautiful fillet of beef, encased in smokey pancetta, wild mushroom pate, warming mustard and a puffed up crispy and golden pastry called 'the wellington'. A truly stunning dish for a dinner party or a sunday treat with the family. Serve with crispy sautéed potatoes and a vibrant watercress salad drizzled with mustard mayo. We love our British beef.....

Tiger Prawn Flourishing in Thai Red Curry….and a load spare for the freezer!

Red Thai curry paste, fragrant, pungent, aromatic with a gentle heat that creeps up from within. Your ingredients will simply flourish bathing in this sheer delight. It's incredibly easy to make and will transform your curry into a thing of beauty. It works beautifully with meats, fish, seafood or vegetables. This recipe will make an abundance of paste that's readily available for that quick fix blast of Thailand. For a neat little trick spoon the paste in ice cube moulds, freeze and it will last up to 3 months.

Toasted pearl barley & Smoked Haddock….. with a freshly soft poached egg

A great version of risotto using pearl barley rather than short grained rice, giving this dish amazing plump little pearls, creamy with a slight bite as they absorb the rich stock. A truly simple and quick hearty supper served today with flakes of wonderful smoked haddock and topped with a soft poached egg.

Pasta alla puttanesca, roughly translated , slutten pasta. Nigella names it Slut's spaghetti - so give yourself a break now and then, there's always perfection, even in the imperfection. Let your creative culinary talents go wild and enjoy your store cupboard... the clues in the name !!!!!! One of my wife Sue's favourites. It's ultra quick, easy to make and tastes divine! Ciabatta Bread

Traditional Italian Ciabatta or slipper bread (because of it's shape presumably) is worth trying - the olivey, oily, holey, beery, yeasty flavour and texture is out of this world - perfect for slathering in garlic and tomatoes or simply dipping in olive oil and balsamic vinegar........
