A delicious quick and simple … Roasted squash with chilli, rigati pasts tubes, a Italian cheese sauce and freshly made Italian toasting bread lashed with buttery garlic … A simple supper for the girls and a splash of cold vino to wash it all down

In a roasting tray, splash a little olive oil and a scattering of chill flakes, some salt and milled black pepper. Toss the whole squash in the mix and give it a good coating, as an alternative cut the squash in half length ways, scoop out the seeds, scatter the seeds in the bottom of the tray and toss in the oil with the halved squashes, the seeds are beautiful to eat as a snack so please don't waste the little bits of loveliness, place in a preheated oven 180c and bake for 1 hour or until soft. Set aside to cool. In a bowl mix the softened butter, pulped garlic and a large handful of finely chopped parsley. Slice the bread and splash over with olive oil and the garlic buttery mix. This can now be kept covered in a fridge ready for toasting. in a large pan of rapidly boiling salted water, part cook the pasta tubes. Remove the beautiful soft flesh from the squash, and stuff this inside each pasta tube, stacking them back in the baking tray of narly chilli oil. Reserve the squash skins and seeds (maybe to use for the base of a hearty soup later). In a pan gently heat the mascapone cheese and half the grated parmesan, to make a delicious sauce, pour sauce over the filled pasta tubes and scatter the remaining grated parmesan over the dish. Bake in a moderate oven 180c for 30 mins until golden and bubbling and toast the garlic bread. Serve this mouth watering, delicious dish with the toasted garlic bread and a beautiful freshly dressed salad…. Enjoy girls….
