Aaron’s.. Kiwi Burgers

My dear friend from New Zealand, Aaron has been banging onto me for years about his famous Kiwi Burger. Well he made me one and I have to share it was totally scrum! A huge homemade beef pate laying on a bed of crispy lettuce, smothered in a mustard mayo, topped with a slab of melted cheese, a slice of juicy pineapple, slices of beetroot, tomato, sliced dills and a huge runny fried egg slammed on top with black pepper, all sandwiched between a mega bun. "Now that's a Kiwi Burger is he said" O.M.G. it was delicious and one was defo enough !!!! So here goes.......

Ingredients

400 Grams Prime beef

1 Large Onion

1 Large Egg

1 Handful Bread crumbs

1 Dash Worcestershire sauce

1 Chunk Strong cheese

1/2 Large Fresh pineapple

2 Medium Fresh beetroot's

4 Large Eggs

2 Large Pickled gherkins

Large Crispy lettuce leaves

2-3 Heaped tbsp Mustard and fresh mayonnaise

2 Medium Vine tomatoes

1 Scattering Seasoning

Directions

This is a really easy recipe, fantastic on a sunny day, hanging out with your mates with a tinny of cold amber nectar (I don't know if that's pc in New Zealand) around the BBQ.

Step 1.  Combine all the beef pate ingredients in a large bowl, mixing and shaping into burgers, chill, not you the burgers !!!

Step 2. Prepare all the remaining ingredients ready to put together later.  Simply, over the hot coals cook your burgers, flipping once, top with cheese and pineapple.  Toast the buns and fry the eggs  (soft yolks are best), add a lashing of the mayo and a nice crisp lettuce leaf to the bun bottom.  Place the burger with melting cheese and roasted pineapple on top.  Add more mayo, beetroot, tomato, dills and finish with the egg on top.  Season and place the top bun onto the stack, securing with a cocktail stick.  I think that's everything?  Forgive me if I have missed anything Aaron....
