Super quick and super simple soda bread, today using abundant apples, warming cinnamon & crushed pistachios. Our encouragement; play with your ingredients, savoury or sweet the choices are endless.....

400 Grams Plain flour

1 tsp Salt

2 tsp Baking powder

50 Grams Caster sugar

1/2- 1 tsp Ground Cinnamon

50 Grams Unsalted butter

2 Large Apples, peeled, cored and cut into small chunks

2 Handful Pistachios

1 Medium Egg

175 ml Buttermilk


1.  Preheat the oven to 180C/ Gas 6.  Line a large baking tray with baking parchment.

2.  In a large bowl mix together flour, salt, baking powder, sugar and cinnamon.  Rub in the butter until the mixture resembles breadcrumbs.  Stir in the chopped apples and pistachios.  In a jug or small bowl mix together the egg and buttermilk.

3.  Pour half the buttermilk mixture into the dry ingredients, gently combine, then stir in the rest until fully incorporated. On a lightly floured surface bring together the dough and shape into a ball.  Place on the baking tray and bake for 45-50 minutes.  Insert a skewer into the centre of the bread and when it comes out clean the bread is cooked.

4.  Serve warm with some cold butter… Enjoy!
