Sweet, moist apricot in a loaf cake, topped with lemon icing & crushed pistacchio, truly delicious and a recipe we would create again, it's the perfect loaf cake to play with ingredients, oranges, cranberries, apple spiced with cinnamon, the list goes on, give it a go it's simple and great fun........

1.  Preheat the oven to 180C/ gas 4.  Grease the base and sides of a loaf tin and line the base with baking paper.

2.  In a large bowl mix together the oil, yoghurt, caster sugar, eggs and vanilla extract.  Stir in the flour, baking powder and apricots until it is a thick, batter mixture.  Pour into the loaf tin and bake for 45-50 minutes or until it's golden on top and when inserting a skewer it comes out clean.  Leave to cool in the tin for 10 minutes and then turn out onto a wire rack.

3.  Mix together the lemon juice and icing sugar until it makes a thick icing.  Drizzle over the top of the cake using a spoon or piping bag and scatter over the chopped pistachios, slice and enjoy.
