This sweet and sticky ginger beer and barbecue meat recipe is great for a lovely summers day or BBQ party, its simple to prepare and I love food straight from the hot smoky BBQ, served today with an array of fresh salads and buttery baby new potatoes, It's great fun and i love cooking with my dad outside on his beloved BBQ.... 🙂

Ginger beer chicken and ribs.
Toss the chicken and ribs in the ground ginger, ground allspice and lots of seasoning. Cover and marinate in the fridge for 1 hour or longer.
Heat the oven to 160C/gas mark 3. Tip the meat into a deep roasting add star anise, ginger beer and sliced ginger, top up with water so that it covers all of the meat. Cover with foil and place in the oven for 1 hour 30 minutes. Uncover and pour away the liquid. The meats can be chilled until required.
To make the glaze, pour all the ingredients into a saucepan and boil until thick and sticky, stirring occasionally. This can take up to 30 minutes.

Heat up the barbecue. until the coals are even and glowing. Brush the glaze over the chicken and ribs making sure it is all coated. Place on the barbecue and cook for 15-20 minutes, brush the glaze over from time to time and turn occasionally. Serve with the lime wedges.
Sticky BBQ Ribs & Chicken.
Put all the ingredients into a saucepan and bring to the boil, then let it simmer for a few minutes until thickened.
Place the meats on a baking tray and cover with foil, cook in the oven 160c for 45-60 minutes.
Brush the sauce over the meat and finish on a moderate barbecue for 15-20 minutes, brushing more sticky sauce as you cook the lovely chicken and ribs.
This can be served with a salad of your choice. Enjoy.
