There is nothing quite like a slow braised & roasted beef rib, today we pulled the meat and shredded it to serve in little Chinese steamed pancakes, as a great alternative to the beef served on the bone ready to devoir.
In a large casserole with a lid, fry of the seasoned ribs of beef in a little olive oil and hoisin sauce, in small batches to brown. Add the stock with a few more glugs of hoisin, scrapping all the sticky goodness from the bottom of the pan, set the oven to low, 140c place a lid on and braise for at least 4 hours, longer if you like. Keep turning the ribs every hour or so until the meat starts to fall from the rib bone, drain the stock and with the lid off give the ribs a final roasting fro 30 minutes, they will be dark and sticky and gorgeous looking.
Steam your pancakes or buns serving on a warmed plate, finely chop the spring onions and pile into a serving dish, prepare a little bowl of extra hoisin sauce and you are ready to feast. Serve a few ribs already pulled with a stack of ribs by the side..... Epic and totally yum !!!!!!
