Chocolate Courgette Cake With Sweet Courgette Ribbons… By Lucy Simmons

A lovely rich moist chocolate & courgette cake.

1. Heat the oven to 180C/ gas mark 4. Grease and line a 24cm cake tin set aside.
2. In a large bowl mix together the flour, cocoa powder and mixed spice. In a different bowl combine the olive oil, sugar, eggs, vanilla essence and grated courgette. Then add the liquid ingredients to the dry ingredients and mix well. Bake for 40-50 minutes. Leave in the tray to cool for 10 minutes and then turn out onto a cooling rack.
3. To make the icing break the chocolate into a large bowl and put the cream in a saucepan, bring the cream to the boil and pour over the chocolate. Stir until completely melted. Leave it to cool and thicken, then spread over the top of the cake until it starts dripping down the side.
I used the vibrant green and yellow peel from the courgettes to decorate the cake, simply dipping them in extra virgin olive oil, dusting with granular sugar, placing them onto a baking tray and blasting in a hot oven for 5 minutes.
