Courgette, Chilli & Red Pepper Chutney……

Gosh, we seem to have a abundance of courgettes this year in the Heart Kitchen garden, time to preserve a few for the months ahead. Perfect as an accompaniment for meats, fish and glorious with cheese. Spicy, crunchy, Courgette and Chilli Red Pepper Chutney. Enjoy.

In a large pan, bring all the ingredients up to a boil, reduce to a gentle simmer for 50-60 minutes, until the vegetables are softened and the the sauce has thickened. Allow to completely cool, ladle into sterilised jars, label, date and store in the refrigerator. Ideal with cold meats, fish, amazing with cheeses and a perfect gift of love for your family and friends.
Will store for up to 3 months unopened.
