Its Easter children so lets get baking..........A Easter recipe that is fun, simple and snazzy. They are enjoyable to make and even more enjoyable to give as a little Easter gift, be as creative as you like with the decoration. A soft biscuit that all the family & friends will love. Happy Easter and happy baking.

- Heat oven to 200C/180C fan/gas 6. Line 2 baking trays with baking parchment. Melt the butter, sugar and syrup in a small saucepan. Mix in the vanilla, remove from the heat and leave to cool for 10 mins.
- Sieve the flour and bicarb into a bowl. Pour in the butter mixture, add the egg and stir together to form a stiff-ish dough. Pop the dough in the fridge for 10 mins to chill and firm up. Roll out the dough on a floured surface to 5mm thick, then use an egg-shaped cutter to stamp out 15 biscuits – re-roll the dough if necessary. Bake for 12 mins until golden.
- On a lightly dusted surface with icing sugar knead and roll out the different coloured icing and use the cutter that you used for your biscuits to cut out the correct size icing. Then in a bowl mix together the icing sugar and water and put into a piping bag with a small circle nozzle and pipe what you want onto your cookies. I decided to decorate my cookies with dots around the edge and a line in the middle, or you could do dots all over or anything you like!
