Cook the soba noodles to packet instruction- drain and refresh in boiled water (for warmth). Before serving the noodles throw in the coriander, chilli and a splash of sesame oil and mix it all together.
In a wok heat a tsp of the sesame oil, once smoking place the scallops in, cook for 2 minutes on each side then remove from the pan. Throw in the remaining sesame oil and add the water chestnuts, cashews, soy and honey. Wok it up for around 5 minutes, making sure all the ingredients are coated and golden. Place the scallops back in the wok and toss around for 1 minute before serving.
Serve the noodles and scallops with a side of lime wedges.
