Shortbread, simple, delicious and fun....What will you make?

100 Grams Plain flour

100 Grams Butter

1-2 tsp Ground ginger

60 Grams icing sugar

60 Grams Cornflour

Dash Vanilla essence


1.  Cream the butter in a bowl to soften until pale and fluffy.  Sift over the flour, ground ginger, icing sugar and corn flour.  Mix together so it starts to form a dough.  Turn out onto a surface lightly dusted with icing sugar and press so the dough comes together.  Cover with cling film and chill in the fridge for about an hour.

2.  Preheat the oven to 180C.  Line a square tin with some baking parchment and gently press the dough into the tin so it reaches all the corners, prick with a fork. This is a great recipe to add your own twist, maybe a scattering of sesame seeds, poppy seeds or lemon zest, go for it create your own version and we would love to see what you made and really encourage you to share them on our website.  Bake for 8-12 minutes or until golden. Leave to cool, lift out of the tin and place on a flat surface using any type of cutter, a pizza wheel works well.  Dust with a little icing sugar and serve.
