Great fun and really simple to make with your young people, baked rhubarb and custard in a light sponge.................And for a really fun time why not forage the farmers markets or your local fruit farm "pick your own" its a great time and you don't have to only use rhubarb.........

  • Yields: 12 Party size

Ingredients

400 Grams Rhubarb, cut into 2cm lengths

225 Grams Caster sugar

250 Grams Slightly salted butter

3 Medium Eggs

175 Grams Self-raising flour

50 Grams Custard powder

100 Grams Ground almonds

500 Grams Madagascan vanilla custard

Directions

1.  Preheat the oven to 220C/ gas 8.  Rinse the rhubarb, dry and cut into 2cm pieces and place onto a lined baking tray, sprinkle with 25g of caster sugar, cook for 20-25 minutes.  Take out the oven and leave to cool while making the cake.

2.  Turn the oven temperature down to 180C/ gas 5.  Grease and line a 28 X 22 cm tray.  In a bowl mix the sugar, butter, eggs, flour, custard powder, ground almonds and 100g of the custard, scape down the side to make certain it is all mixed in.  Pour into the prepared tin and add the remaining custard and sprinkle over the rhubarb.  Bake in the oven for 45-50 minutes.

3.  The centre of the cake should still be wobbly after being cooked, leave to cool in the tin.  Serve with lashings of extra custard or ice cold cream, enjoy your baking young people........
