Hashed Gammon & Baked Eggs…..

Comfort food on so many levels. Always a winner, this thrifty little simple supper, using all the leftovers from an epic roast dinner, by simply mincing together, the meat, potato, stuffings, vegetables, sauces... Served warm from the oven with a few baked eggs and lashings of the famous Houses of Parliament sauce. Delicious, enjoy.....

Ingredients

Bunch Leftovers from a roasted dinner, meat, veg, stuffing & sauces

4 Medium Eggs

1 Splash Olive oil & butter

1 Small handful Fresh picked parsley

Dash Houses of parliament sauce

Directions

Mince all the left overs from a roast dinner together, season with salt and freshly milled black pepper, drizzle with olive oil and a few knobs of butter, place in a moderate oven 180c in a ovenproof serving dish and bake for 30 mins.  Fork through every 10 minutes to fluff up, during the final 10 minutes make a few wells in the hash, crack an egg into each well, bake until the eggs are cooked to your liking, scatter with fresh chopped parsley and serve immediately to the table with lashings of Houses of Parliament sauce, a truly thrifty, delicious simple supper.  Enjoy.

Today we are using the left over roasted gammon,  sage & onion stuffing, mashed potato, beans & peas, apple sauce and this works equally as well with Pork, lamb, beef, chicken, or just vegetables.... Comfort food on so many levels....
