Hobson & Jodie Go Pizza Crazy……….

Hobson & Jodie go pizza crazy in the Curious Kitchen.............The story goes.... We want to make fresh homemade pizza, " look we have bought a tonne of ingredients to top them and stuff them with. Cool I replied, let's get you both in the zone and make some fresh dough......What will you top and stuff your pizza dough with?......Watch out for the next session, as they make calzone stuffed crusts.........

7 Grams Dried yeast

325 ml Tepid water

500 Grams Strong bread flour

1 Scattering Sea salt

1 Handful Fresh juicy tomatoes

1 Scattering Oregano

1 Pinch sea salt

1-2 Dash Olive oil

Bunch Ingredients to top and stuff your base

1 Scattering Semolina flour


The story goes.... "We want to make fresh homemade pizza, look we've bought a tonne of ingredients to top them with and stuff them with".  "Cool" I replied, "let's get you both in the zone and make some fresh dough"..... After a quick shoulder rub and a little Italian music we were ready.  Add the yeast to the tepid water.  "What's tepid water?"  It's water that is warm enough to dip your little finger in, keeping it there without burning you, it brings the yeast to life.....Everything else into the large bowl, add the yeasty frothing water and bring it all together.  Out onto a lightly floured surface and become a master baker, kneading your beautiful dough, add a bit of love and continue to knead for 8-10 minutes, the dough will transform, become smooth and elastic. Shape into a ball, oil the bowl, place the dough in it and cover with a tea towel, now find a warm spot and leave the dough to rise, double in size.  Meanwhile you can start to prepare all your delicious ingredients.....

Chopping and squidging, wrapping meat into cheese for the stuffed crusts and eager to check the dough, "it's twice the size", "cool", now simply divide the dough into 4 equal portions, it needs to rise again, to double its size, so cover it and put it back in the warm.

The guys set to.... making a simple tomato sauce, crushing the juicy tomatoes with their hands, adding oregano, salt and a dash of oil.

Pre-heat the oven to hot, upturn a couple of baking trays, this will be perfect to cook the pizzas on.  Roll out the dough on a lightly floured with semolina surface, stretch them a little, rustic is great.  A slathering of tomato sauce on each, lay the stuffing filler around the edge and fold over to create a crust, now go wild, top them, be creative, and boy they were.......

Hobson, like a volcanic machine, loading handfuls of coarsely grated cheese, crushed olives, sliced pepperoni..loads of it, layers of parma ham, more cheese, jalepenos, red peppers, more cheese........ Jodie, in a gentler and more precise way, adding spiced chicken, pineapple, cutely chopped peppers, fresh salad leaves, ripped basil, tiny sausages wrapped in cheese to form her crust, drizzled olive oil and a sprinkle of diced olives, more cheese, they are ready to bake....A crack of black pepper.....

In the hot oven,  7-10 minutes, until golden, bubbling and your tasty buds can't wait any longer, slide onto a large wooden board and devour..... Stunning and what a varitable feast for all our senses.....Roll on the next pizza baking session......What's your favourite?.......
