Hearty breakfast or brunch, these monumental nests are sure to sustain your day. Nutty & sweet alpine cheese, crispy lardons of smoked bacon encased in matchsticks of potato, onion & garlic, perfect with eggs your style.....

In a large frying pan and over a moderate heat, fry the lardons until crispy and golden, add the chopped onion, and garlic to soften along with the ripped bay leaf, season. add the wine, and reduce until a smidgen of juice is left. Whilst this is happening peel and chop the potatoes into thin matchsticks, rip up the cheese and grease a muffin tin generously with butter. Add the matchsticks and cheese to the pan, combine well, check for seasoning. Transfer the mixture to the tin, baking in a moderate oven 180c until golden, bubbling and the potato is cooked.
To serve, remove the golden nests to a warmed plate and serve with a freshly cooked egg, seasoned with a little cracked black pepper.
