As it was raining outside, I wanted to make one of my favourite recipes - gooey moreish yummy flapjacks. A quick fix to take away the rainy day blues. It's a great recipe to create by adding your favourites ingredients. It's really simple and the list of extra ingredients is endless. So give this flapjack recipe a try and let your creative juices go crazy... Enjoy!

Now here is the thing, you could make these in so many variations, try adding a little mixed spice, or some zest of orange or lemon, maybe a handful of plump and juicy sultanas, how about coconut or dried fruits like apricot, banana, use mixed seeds for a real crunch or my all time favourite chocolate chips. Let your creative juices run wild and I would love to hear your favourites.
In a large bowl mix together the oats, melted butter, sugar and golden syrup. Grease a baking tin, spoon in the mixture and press down with the back of spoon so that the mixture is flat and goes in all the corners. Place in 180C oven of 20 minutes. Leave to cool and cut into 12 squares and serve.
