Raw Coconut & Chocolate Bars …They May Just Change Your Life…….

My dear friend Kami first introduced me to these little bars of coconut loveliness a year ago, the story goes..... "Si, try one of these bounty bars for dessert", there was a slight pause as she looked me straight in the eye.... "it will change your life forever"!!!!! Well, I devoured the bar, it was delicious.......I waited.....waited for a whole year in fact and still no life changing effect from the bar, or so I thought.......One year on, at an event here at HK another friend Sophie announced she would be making a dessert called "The bounty of your life". As a group we started to make our bars; mixing, blitzing, melting and creating. Into the fridge for a final chill then onto a plate ready to share, they looked great. I became aware of the groups joy, my own joy; we placed them onto the table, it was in that moment, the moment of the first bite that I was filled with love and huge gratitude. Firstly for the sensual explosion in my mouth, then my own heart; joyful for the experience we had all created together. Grateful for sharing, grateful for the old and new friendships that had been nurtured and developed. Yes it's true, today this bar changed my life. As I share on many Heart Kitchen events "We can only choose to make changes to that which we are aware of".... I became aware of my friendship with Kami, how I had grown, how our connection had grown, how Kami had changed and the choices she now makes with food. 2 Handful Desiccated coconut, 2 cups

1 Cup of coconut milk

3 tbsp Coconut oil or coconut butter

4 tbsp Pure maple syrup

5 tbsp Coconut oil

3 tbsp Raw cacao powder

1 Pinch Sea salt


In a saucepan mix the coconut milk, coconut oil, natural sweetener and salt. Place over a gentle heat, stirring until well blended and dissolved.  Stir in the fresh or desiccated coconut, spoon into a lined shallow tray, pressing the mixture firmly down.  Cool in the fridge until firm and set.

Cut the set coconut mixture into small sized bars and place in the freezer to completely harden.

Place a heatproof bowl over a pan of gently simmering water and melt the coconut oil, cacao powder and syrup until glossy.

With the speed and skill of a chocolate master, cover the frozen bars in chocolate, place on a wire rack, once the chocolate has set place in the fridge ready to devour......
