Savoury Muffins, Served Warm From The Oven…..

Savoury muffins, perfect for a sunshine picnic, a lazy sunday brunch or a summer party. Simple and truly delicious. Try out different fillings for your own muffin creations, grated carrot, sweet potato or courgette, pastrami, a handful of chopped chorizo, herbs, olives or a variety of strong hard cheeses, how about parmesan, black olive & sun-dried tomato.......

Ingredients

275 Grams Self raising flour

1 tsp Baking powder

1 tsp Bicarbonate of soda

1/2- 1 tsp English mustard powder

100 Grams Strong cheese ( Today we used extra strong Cheddar)

50 Grams Ham

1 Handful Chives with flowers

125 ml Whole milk

150 ml Natural yogurt

1 Egg

Directions

Such a simple and delicious sharing plate...... Savoury muffins.

Preheat the oven 200c, grease or line a 12 hole muffin tin with paper cases.

In a large bowl, combine the flour, baking powder, bicarbonate of soda, mustard powder, cheddar, ham and chives.

In a large jug, whisk together the milk, yogurt and egg.  Stir into the flour mixture until lightly mixed.

Spoon the mixture equally into the tin and bake for 20-25 minutes until firm and golden brown.  Leave to cool slightly before eating.  Muffins are best devoured on the day, although leftovers can be warmed in the oven.  Perfect served with cold butter.
