Lucy' s simple savoury pancakes recipe - you can even make it like a pizza pancake topped today with carved ham, sliced tomatoes, spring onion , and the simple cheese sauce. Fun to make, so give them a go, create your own pizza pancake, or roll them up and cover with more cheese sauce and top with grated cheese, melted under the grill, for a savoury pancake roll. Yummy and delicious.

Ingredients

110 Grams Plain flour

Pinch Sea Salt

2 Eggs

200 ml Milk

75 ml Water

50 Grams Butter

25 Grams Butter

25 Grams Flour

225 ml Milk

100 Grams Cheddar Cheese

3 Spring onions

4 Tomatoes

80 Grams Ham

Sea salt and freshly milled black pepper

Directions

In a large bowl sift together the plain flour and a pinch of salt.  After sifting, make a well in the centre of the flour and break the eggs into the well. Then start to whisk the eggs into the flour mixture, combine it all together.

In a jug, measure out the liquid ingredients and slowly beat into the large bowl, make sure there is no more flour left around the side.

Get a pancake pan and melt 20z of butter  Wait until the pan has got really hot then add your mixture, about 3tbsp full, swirling the mixture around coating the pan.  Turn down to a medium heat while cooking the pancakes.  You can lift the edge of the pancake with a palette knife to see if it has cooked, when it has reached a light golden colour its ready to flip.   As soon as the pancake has been flipped scatter all your toppings onto the pancake  and drizzle with cheesy sauce (the other side won't take as long to cook).  Place under a hot grill for 1- 2 mins until golden and bubbling .

A simple quick cheese sauce.

For the cheese sauce - Melt the butter in a small pan, then whisk in the flour. Cook for one minute, then gradually add the milk whisking continuously.  Bring to the boil and reduce the heat to a simmer for one minute until the sauce is thick and smooth.  Stir in half of the cheese and season with black pepper.
