Seriously Lemon……Curd.

Imagine the lemons in front of your eyes, their journey from flower to fruit, drenched in warming sunshine, a touch of rain. It's like they have been on a summer vacation and after the journey to your table are ready for a wake up call. Well, wake them up!!!! Rolling with slight pressure with your hands on a wooden worktop or board, stirring the juices from their slumber, the zest will be grateful, awakening its essence. The aroma of fresh lemons could take you on a journey back to there origin, sweet groves of fragrant lemons...... Lets make curd.......

Ingredients

4 Lemons

200 Grams Caster sugar

100 Grams Butter

3 Eggs

1 Egg yolk

Imagine the lemons in front of your eyes; their journey from flower to fruit, drenched in warming sunshine, a touch of rain.  It's like they have been on a summer vacation and after the journey to your table are ready for a wake up call.  Well, wake them up!!!! Rolling with slight pressure with your hands on a wooden worktop or board, stirring the juices from their slumber, the zest will be grateful, awakening its essence.  The aroma of fresh lemons could take you on a journey back to their origin, sweet groves of fragrant lemons...... Carefully zest the lemons with a fine grater, extract every last drop of juice, place in a heatproof bowl with the sugar and butter.  Sit the bowl over a pan of gently simmering water and stir with love until combined.

Lightly whisk the eggs and egg yolk, simply stirring them into the lemon mixture.  Whisk until all the ingredients are well combined, leave to cook for 10-15 minutes, stirring every now and then.  The mixture will become creamy, glossy and thick enough to coat the back of a spoon.

Remove the lemon curd from the heat and set aside to cool, stirring occasionally.  Once cooled, spoon into sterilised jars and seal.  Store in the fridge until ready to use, that's if it last that long!

This recipe makes 1 x 500g jar or 2 x 250g jars.
