Lightly grease and line a square loose bottom 23cm cake tin. Pre heat your oven to 180c.
Peel and core the apples and cut into small chunks or slices and coat them, in a bowl, with all the spices.
In a food mixer, using a whisk attachment, cream the butter, sugar, beaten eggs and flour and whisk to a light smooth consistency. Spoon into your prepared tin and level the top. With your hands press in chunks/slices of spiced apple, some deep, some halfway and some on top. Sprinkle with brown sugar and any remaining spice and bake in the centre of the oven 40-45mins until golden and brown. Check the cake is cooked by inserting a sharp metal skewer into the cake, it should come out clean.
Best eaten slightly cooled with a vanilla ice cream or a beautiful, silky, vanilla custard.......... Delicious !!!!
Seasonal pears work well too.
