Susie's buns, crunchy on the outside, soft and fruity inside, delicious on a lazy Sunday with a big mug of freshly brewed hot tea...Perfect! As we shared " Little volcanoes of fruitiness "

Ingredients

225 Grams Self raising flour

140 Grams Butter

140 Grams Demerara sugar

1 Egg

225 Grams Dried fruits

1 Dash Milk

1 Scattering Sugar

Directions

Sue's Method for Her Rocky Fruit Buns.

Sift the flour, rub in the butter to fine crumbs, add sugar and egg mixing to a fairly thick consistency, using a little milk to loosen if needed, add the dried fruit.

Preheat the oven to 200c baking oven.  Dollop onto a lined baking tray in random shapes, sprinkle with extra demerara  sugar and bake for 10-15 minutes until golden.  Simple, delicious and fun.

For a variation, try adding glace cherries, candied peel or any other dried fruits lurking around your pantry or store cupboard.
