A lovely version of the classic winter crumble, using early summer harvest, rhubarb & strawberries entombed in a light ginger spiced crumble..........Serve into little glass bowls with a helping of ice cream....

Ingredients

400 Grams Rhubarb, washed, cut into 2cm pieces

400 Grams Strawberries, washed, halved

2 Star Anise

75 Grams Light brown soft sugar

1 Large Orange, juice and zest

225 Grams Plain flour

90 Grams Caster sugar

1 tsp Ground ginger

115 Grams Usalted butter
