Sunday Brunch Breakfast Burrito’s… By Lucy Simmons

As it was such a beautiful day i decided to have breakfast on the patio, so what more could i want than a little bit of a twist on a conventional English breakfast! All wrapped up in a warm floury tortilla. Give it a go and let your creation's go wild savoury or sweet, even both. I love the sunny sunday first days of spring.

  • Yields: 4 Medium

Ingredients

8 Sausages

7 Eggs

300 Grams Closed cap mushrooms

8 Slices of bacon

8 Tortilla wraps

60 ml Milk

1 tsp Sea salt and freshly milled black pepper

1 tbsp Butter

1 tsp Butter

1 Handful Cheddar cheese

Directions

1. Preheat the oven to 180oc and place the sausages in an oven proof dish.   Cook for about 30- 40 minutes or until golden brown.

2. Meanwhile peel and slice your mushrooms and place in a pan with the butter over a moderate heat.   Crack your eggs into a bowl add the milk, season with salt and pepper, mix together throughly.  10 minutes before your sausages are ready wrap your 8  floury tortillas in tin foil and place in the oven to warm through, cook your bacon under a preheated grill.  Turn the mushrooms down onto a low heat and stir occasionally, place 1 tbsp of butter into a large frying pan, waiting until it has melted then add your egg's stirring continuously until soft and scrambled.

3. Place the feast in warmed serving dishes,  wrapping all the lovely breakfast in your own burrito, serve with tomato and brown sauce,

This idea works great with roasted tomatoes, bbq beans, grated cheese, really anything that takes your fancy for a quick and simple breakfast all wrapped up in a floury tortilla,  umhhh.... what about maple syrup !!!
