Sweet Chilli Prawns & Mango All Wrapped Up… By Lucy Simmons

A truly simple, delicious and packed with flavour, lunchtime wrap.....

1. Making the chilli sauce: whiz the peppers, chilli, tomato, garlic and ginger in a blender or food processor until they are all finely chopped. Add the other ingredients to a saucepan with the chilli mixture and bring to the boil cook for 15-20 minutes over a steady bubbling heat. Cool and reserve, there will be plenty left over to store in a fridge for a later creation.
2. For the wraps prepare all the ingredients. Add the sliced mango, shredded lettuce, salad onions, cucumber and cooked prawns into a bowl and pour over some of the chilli sauce, gently combining.
3. Serve a stack of the beautiful prawn & mango with wraps on the side, for an alternative use large lettuce leaves, pile in the filling, wrap up and devour.
