Torta Simon… Chocolate Almond Cake with a Warm Toffee & Sea Salt Chocolate Sauce

A chocolate explosion, chocolate and almond, gooey in the centre cake, subbing flour for almonds, topped with a warm sea salt & toffee chocolate sauce, and of course cold thick double cream. Just had a recap here and it am really aware that i have used the word, CHOCOLATE many times. Well a little bit of chocolate every know and then is not gonna kill you, in fact my belief is that, it feeds my soul with love and a little bit of naughtiness and a handful of wow's thrown in too. So give it a try, and what if this were true for you too !!!

Ingredients

225 Grams Dark chocolate

100 Grams Butter

4 Eggs

150 Grams Icing sugar

150 Grams Ground almonds

50 Grams Butter

150 Grams Chocolate

200 Grams Icing sugar

1 tbsp Golden syrup

100 ml Double cream

1/2 tsp Real vanilla extract

Directions

To make the cake.  Pre heat the oven to 170c fan.  You will need a 23cm cake tin greased,  Melt the chocolate and butter together, until silky and glossy, using a bowl over gently simmering water, do not burn.  Whisk the egg yolks with the sugar until pale in colour and light and fluffy.  In a seperate bowl whisk the egg whites to soft peaks.  Add the melted chocolate to the egg yolk mix, combine thoroughly, add the almonds mixing together,  finally with a large metal spoon gently fold in the peaky whites.  Pour into the cake tin and bake for 25-30 mins.  The cake is cooked when it has a soft crust on its outside, the center will still be gooey.  Place on a wire rack to cool slightly.

For the warm sauce.  As above melt the chocolate and butter together until silky and glossy, turn off the heat keeping the bowl over the warm water, add syrup, vanilla and cream stirring gently.  Sieve the icing sugar into the mix and whisk to a smooth, glossy sauce, adjust the consistency of your chocolate if needed by adding a tsp of warm water or a little more sifted icing sugar.

Place the warm cake sliced into 8 on a serving plate, drizzle with sauce and served  with jugs of cold cream and warm extra chocolate sauce.  Somedays one slice is just not enough, and hey as i shared earlier its great for my soul.  Epic enjoy.
