The reason why I am publishing this recipe is because on the 22nd of March I decided to take part in a Sports Relief Bucks Bake Off. In the Bake Off I entered the family favourites category and made a sandwich cake with a light, flavoursome frosting. I decided to use this recipe because it is very scrummy and everyone who has had it has enjoyed it. It's the most chocolatey of chocolate cakes with a heap of revels on top!! Yummy!!!

230 Grams Self-raising flour

1 tsp Baking powder

3 tbsp Cocoa powder

230 Grams Butter

230 Grams Caster sugar

4 Eggs

110 Grams Quality plain chocolate

250 Grams Revels

150 Grams Quality plain chocolate

200 ml Double cream

140 Grams Butter

280 Grams Icing sugar


So I decided to make this chocolate cake because I was entering the Bucks Bake Off.

To start this amazing cake pre-heat the oven to 180oc/ gas mark 4 and grease and line two cake tins.

Melt the chocolate and set aside.  In a large bowl sift the flour, cocoa powder and baking powder.  Add the butter caster sugar and eggs and using an electric mixer beat it all together until smooth and all combined.  Then fold in the melted chocolate.

Spoon the mixture into the tins and bake in the oven for 20 minutes or until risen. Transfer the cake to a cooling rack and leave to cool.

Then it is time to make the delicious frosting.  Put the chocolate into a heatproof bowl.  Heat the cream in a sauce pan until boiling then pour over the chocolate and stir until smooth.  Leave to cool for 20 minutes, string occasionally until thickened.

In a sperate bowl mix the butter and sifted icing sugar together, beat until smooth.  Then beat into the chocolate and chill for 10 minutes.

To decorate - spoon about half the mixture into the middle of the cake and then place the other layer on top, next spoon the rest of the mixture onto the top and spread evenly around. The final touch is to add the revels! Now that your cake is ready it is time to enjoy it!
