Vibrant Couscous……Smiling With Flavour For You Nikki.

Fresh, vibrant and packed with flavour & texture, this green couscous is so versatile, mix up the flavours, what would your tasty buds want ? Its' a truly stunning dish to adorn any table. For you Nikki....

200 Grams Couscous

200 ml Boiling water or vegetable stock


1 Splash Olive oil

Sea salt

1/2 tsp Cumin

2 Handful Pistachios

4 Spring Onions

1-2 Fresh green chilli

1 Handful Rocket leaf

1 Small handful Parsley, flat leaf

1 Small handful Coriander

1 Scattering Tarragon

1 Scattering Mint

1 Scattering Dill

100 ml Olive oil


A recipe for you Nikki, vibrant with texture, packed with flavour and above all, versatile.

Place couscous in a large bowl, pour over the boiling water or vegetable stock.  Cover with film, leaving it to absorb for 10 minutes.

Whilst the couscous is standing, heat olive oil in a pan over a moderate heat, add the sliced onions and gently sauté for 10 minutes stirring now and then until golden, soft and sweet.  Add salt and cumin, mix well and leave to cool.

Place all the ingredients for the vibrant sauce into a food processor, whizz it up until silky and smooth.  Add the paste to the couscous, mix well, fluffing it all up with a fork.  Add the sauté onions, pistachios, spring onion, chilli & rocket, gently combine, serving at room temperature.
