Warm Black Forest Chocolate Gateau…..

An exciting twist on the 70's classic. Warm gooey chocolate centre, encased in rich moist chocolate cake, served with warm black cherry compote, beautiful and just for you Cadi.......I promised you cherries and chocolate well here it is ...Enjoy!

Ingredients

175 Grams Plain chocolate

175 Grams Butter

4 Eggs

3 Egg yolks

75 Grams Caster sugar

75 Grams Plain flour

200 Grams Fresh black cherries

50 ml Syrup stock

Kirsch liqueur

4 Heaped tbsp Black cherry jam

Icing sugar

Clotted cream

Directions

Feel the excitement as you and your guests sink their spoons into the gooey chocolate dessert.  It's like that moment has arrived, all the anticipation, all your senses are  brought to life in that moment, the rich moist chocolate, mixing with the black cherry and clotted cream........delicious!

So lets get started ...... You will need 6 x 8cm x 6cm rings, now the thing with this dish it can be made well in advance, as the gateaux need to be baked for just a few minutes just before serving

First, make the gateaux. Place the broken pieces of chocolate and butter into a bowl and gently melt over a pan of simmering water, until silky and smooth, set aside to cool to room temperature. In an electric mixer, or you could whisk by hand for a little workout, whisk the eggs, the yolks and the sugar until the mixture has doubled in volume. Gently fold this  into the cooled chocolate, again gently fold in the sifted flour keeping as much air in it as you can; this will keep your gateaux's light. Place your rings on a parchment lined tray and spoon in the mixture, filling to about 2/3rd full. Chill until needed. To bake these little sponges of deliciousness, place in a pre-heated oven 180c for 8 mins.

To make the compote simply, stone the cherries, reserving a handful un-stoned for serving. Place in a pan with the syrup and a splash of kirsch, bring to the boil, then gently simmer for 5 mins, add the black cherry jam to this and continue to gently heat for a further 1 min. This can be served warm or completely cooled.......you choose.

To serve,  remove the baked gateaux from the rings onto individual plates or a beautiful large platter, pour the lovely compote to the side adding some whole cherries and the clotted cream and dust the whole dessert with icing sugar, serve immediately.
