White Chocolate Birthday Cake….For The Milky Bar Kid.

So, it's the eve of our son Murray's 24 birthday, as a youngster he would spend hours dressed up as the milky bar kid, eating large chunks of his favourite white chocolate, come to think of it he still loves to dress up today..celebrating his 24th with all his friends all dressed up as characters from the Harry Potter films. So for you Murray a white chocolate cake of sheer magnitude filled with love inside and out, enjoy your celebration cake !!! - and your Harry Potter birthday party 🙂

For the Cake: Preheat oven to 180 C / Gas 4. Sift together the 310g flour, bicarbonate of soda, baking powder and salt. Set aside.
In small saucepan, melt 175g white chocolate and hot water over low heat. Stir until smooth and allow to cool to room temperature.
In a large bowl, cream 225g butter and 300g sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Stir in flour mixture alternately with vanilla infused buttermilk. Mix in melted white chocolate.
Pour batter into two 23cm round cake tins. Bake for 30 to 35 minutes in the preheated oven, until a skewer inserted into the centre of the cake comes out clean.
For the Frosting: In a saucepan, heat the cream gently to just boiling point, add the broken white chocolate and combine until melted, thick and glossy, cool to spreadable consistency.
Place 1 cake on a groovy cake stand, cover with 1/3rd of the white chocolate icing, place the 2nd sponge on top, pressing gently together, drizzle the remaining icing and smooth over the top and sides, scatter with shavings of white chocolate. Enjoy, a real winner for lovers of white chocolate, you could even dress up 🙂
